The Cheeses
The Trompia Valley has a very ancient cheese making tradition which finds its greatest expression in the Nostrano of Trompia Valley, a very hard cheese, which is currently applung for the D.O.P. (Denomination of Protected Origin) mark. Nostrano cheese is the result of a long tradition which is an authntic expression of the local land and culture. As well as Nostrano, there is also Formagella, produced after a brief maturation process, and the cheeses produced in the mountain pastures of the Upper Valley, where the unique conditions give intense and individual flavours to the cheese. In recent yeas there has been an increase in the breeding of sheep and goats and some excellent fresh cheeses have appeared on the market ("caprini", "erboritani") as well as mature cheeses ("stracchini" and "caciotte"), yougurts and ice creams. http://nostrano-valtrompia.it/
